You may have heard about the raw food lifestyle and its many health benefits:

  • Increased energy

  • Youthful appearance

  • Better digestion

  • Disease prevention

  • Healthy weight loss

  • And the list goes on!

Raw food means food that is uncooked or prepared below 116°F, keeping all its essential nutrients and enzymes intact. Uncooked, unprocessed foods (fruits, veggies, seeds, nuts, beans, grains) retain their vital life force, and when we eat them, we get that energy too. Food that’s alive makes us feel alive!

At Cucina Migrante, we love experimenting with raw culinary creations, and one of our favorite indulgences is a good raw cake. Raw desserts are packed with goodness and surprisingly simple to make with the right tools and a bit of creativity.

Think of a raw cake recipe in layers:

  • Base: A sweet, nutty crust

  • Middle: A creamy mousse filling

  • Top: Fresh fruit or fun toppings

Below are our guidelines for each layer of your cake, plus some tools and tips we love. But first — get creative! Think colors, flavors, nuts, fruits — what combinations would you love together? Use these ideas as a jumping-off point for your own raw cake masterpiece.

Raw Cake Base Layer (Crust)

  • Mix dates and nuts for a naturally sweet crust.

    • We love organic Medjool dates for their moist, firm texture and organic raw cashews. Try soaking your nuts overnight for easier digestion.

  • Pulse everything in a food processor until you have a sticky, moldable texture.

  • Press into a springform pan and chill while you make the other layers.

Quick tip:
Use about 2 cups of nuts and 10 or so dates. Add a drizzle of organic raw honey if needed, but the dates are usually sweet enough on their own.

Middle Cake Layer — Chocolate Mousse Filling

For a rich, raw chocolate mousse, blend:

  • 1–2 ripe avocados

  • 1 banana

  • 3–4 tbsp raw cacao powder (adjust to taste)

  • Optional: a bit of cocoa butter or coconut butter for extra creaminess

  • 1–2 tbsp coconut cream

  • 1–2 tbsp raw cacao nibs (optional, for a lovely crunch)

  • ½ tsp vanilla extract

  • 2–3 tbsp honey or your favorite natural sweetener

We recommend using a high-speed blender like a Vitamix to get that perfectly smooth, creamy texture.

Fruit Topping — Berry Purée

A fruity topping brings it all together.

Blend raspberries and strawberries with a splash of lemon juice and a drizzle of honey for a zesty berry purée.

Or top your raw cake with fresh fruit instead!

Finish with coconut flakes, raw cacao nibs, or anything else that makes you smile.
