Our Chef will teach you how to impress family and friends with vegan Italian specialties. 

Hailing from Italy, Francesco knows exactly how vegan and raw food are naturally immersed in the food culture and shows you how to replicate their delicious and nutritious simplicity. 

In this hands-on class, you will learn how to make three Italian specialties that you just won’t be able to wait to share with your family and friends. Begin with a raw zucchini spaghetti salad with a piquant pesto. Then, mix up a Tunisian couscous exploding with flavor and learn how to meld Sicilian flavors to craft a vegan caponata. Guests are welcome to bring wine and beer to enjoy during the class.

Raw Zucchini Spaghetti Salad
Organic Italian zucchini, spinach and arugula pesto, chia seeds and basil

Couscous With Organic Roasted Veggies
Tunisian couscous, eggplant, heirloom tomatoes, zucchini and potatoes

Caponata
A Sicilian flavor concoction of eggplant and other produce
